Power Protein Salad

Can this count as my green for St. Patricks Day? How about I wear my green pants while eating this salad?

I’ve been eating so much of this Power Protein Salad, plus pounds of avocado that I’m surprised I haven’t turned green. At least I’d be on trend. Green is still in, right?

I’m making up for the 9 months that I didn’t go near anything green, unless it was chives in my buttered baked potato. This salad is loaded with protein and healthy fats. Since I my husband grills a bunch of chicken and I cook up a bunch of eggs over the weekend, this salad is super easy to throw together for lunches during the week.

Are you familiar with Bragg Liquid Aminos? I throw it on everything and in this case, I used it as the dressing. It’s an alternative to soy sauce and believe it or not, it has health benefits. SCORE! You can put it over rice, veggies, quinoa, sushi or use it as a salad dressing. I’m pretty sure you either love it or hate it. I wasn’t a fan in the beginning, but now it’s a staple in our house. Plus, if you’re paleo, there’s only one small change to the dressing (no bragg, sorry) and you’re good to go.

Power Protein Salad

Ingredients
  

  • 1 – 1 1/2 cups fresh spring mix
  • 1/2 cup grilled chicken breasts chopped
  • 1 hard boiled egg chopped
  • 1/3-1/2 cup avocado diced
  • 1 tablespoon sunflower seeds

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Bragg or gluten-free soy sauce – if following paleo diet skip this and add fresh lemon juice
  • salt + pepper

Instructions
 

  • Throw the lettuce into a large bowl. Add grilled chicken, hard boiled eggs, avocado and sprinkle with sunflower seeds.
  • Drizzle olive oil and Bragg over the salad, then season with salt + pepper.
